피오렌티나 스테이크 (티본스테이크)

티본 스테이크(T-bone steak)는 소의 안심과 등심 사이에 T자 모양의 뼈부분의 부위를 이용하여 구운 스테이크 요리이다. 티본 스테이크란 이름도 T자 모양의 뼈가 보인다는 뜻에서 유래하였다. 티본 스테이크로 유명한 것은 이탈리아 토스카나.주 피렌체 지방의 비스테까 알라 피오렌티나(bistecca alla fiorentina)가 있다.

Fiorentina Steak (T-bone Steak)

The bistecca alla fiorentina (beefsteak Florentine style) is an Italian steak made of veal (vitellone) or heifer (scottona) that, combined with the specific preparation, makes it one of the most popular dishes of Tuscan cuisine. It is a high cut including the bone, to be cooked on the embers or on the grill, with a degree of "blood" cookin.
