바이체지 (백절계)

백절계는 중국 광동의 대표적인 가정식이며 광시 전역에서 유행하는 요리다. 특히 농촌에서 경조사가 있을 시 빠질 수 없는 요리이기도 하다. 백절계의 국물은 진국이라 불리며 닭 껍질은 쫄깃하고 육질은 부드럽다. 맛은 담백하고 좋은 게, 큰 자리건 작은 자리건 모두 어울린다 할 수 있다. 백절계의 색깔은 새하얗고 약간의 노란 기름을 띄고 있으며, 파 기름의 향을 가지고 있다. 만들기도 편하며, 조미료가 들어가지 않고도 원래 맛의 특징을 유지하여 미식가들에게 큰 각광을 받고 있다.

Baiqieji (White Cut Chicken)

The chicken is salt marinated and is cooked in its entirety in hot water or chicken broth with ginger. Other variations season the cooking liquid with additional ingredients, such as the white part of the green onion, cilantro stems or star anise. When the water starts to boil, the heat is turned off, allowing the chicken to cook in the residual heat for around 30 minutes. The chicken's skin will remain light-coloured, nearly white and the meat will be quite tender, moist, and flavourful.
