토마토 케찹

케첩 또는 토마토 케첩은 흔히 버섯, 물고기, 허브 절임, 양념으로 만들어져 있는 소스라는 일반적인 용어에서 출발한다. 최초의 케첩은 중국 서남부 지역에서 사용되던 켓샵(鮭汁, kôe-chiap)이라는 소스에서 유래했다. 이 소스의 명칭은 주 원료인 잉어에서 따온 것인데 맛과 향이 좋아 동남아시아까지 퍼졌다. 오늘날과 같은 형태의 현대식 토마토 케첩은 20세기 초반 하인즈에서 판매되었다.

Tomato Ketchup

In the 17th century, the Chinese mixed pickled fish and spices and called it (in the Amoy dialect) kôe-chiap or kê-chiap meaning the brine of pickled fish or shellfish. By the early 18th century, the table sauce had arrived in the Malay states (present day Malaysia and Singapore), where English colonists first tasted it. The Malaysian-Malay word for the sauce was kicap or kecap (pronounced "kay-chap"). That word evolved into the English word "ketchup". English settlers took ketchup with them to the American colonies.
