얼궈터우 (이과두주, 二锅头酒)

북경에서 백주를 빚은 역사는 유구하다. 금나라 때에 북경을 “중도”라고 불렀으며 증류주 기기가 전해지면서 소주(,배갈)를 빚게 되었다. 청나라 중기에 와서 경사(京師) 배갈주 공장은 배갈주 품질을 제고하기 위해 제조공정 개혁을 실시하였다. 술을 증류할 때에 냉각기로 사용하는 것을 시궈(주석 솥) 또는 톈궈(天鍋)라고 부르는 데, 당시 세개의 냉각 솥을 거쳐 술을 만들었다. 술을 증류할 때에 증류해 낸 알코올 증기에 대해 주석 솥 안에 첫 번째로 넣었을 때의 냉수로 냉각한 후 추출하는 “주두(酒頭,)”와 세 번째로 주석 솥 안에 넣은 냉수로 냉각한 후 유출하는 “주미(酒尾)”를 추출하여 기타 처리를 하고, 두번째 냉각 솥에서 얻은 술을 사용했다.

Erguotou

Erguotou, also known as Chinese white liquor is a Chinese alcoholic beverage. It is a type of baijiu made from sorghum. The most famous brands are Red Star and Niulanshan . It is available in various strengths, the average being 50% alcohol or 100 proof. The name "second distillation" indicates its level of purity. It is a clear, potent spirit and takes six months to produce. It is one of the most commonly drunk baijiu in Beijing and thus has a deep association with China's capital.
