삼불점 (三不粘, 통허쥐)

하남 안양의 특색음식이다. 약 150여 년의 역사를 가지고 있으며, 청나라 황실 궁중연회의 귀한 디저트 중 하나이다. 삼부점은 '세 가지에 붙지 않는다'는 뜻으로 그릇, 치아, 젓가락에도 붙지 않는다고 하여 지어진 이름이라고 한다. 신선한 계란의 노른자를 주재료로 하며, 녹말가루와 설탕, 라드 그리고 물을 적당히 섞어 체에 거른 후 가열하여 만든다. 들어가는 재료가 단순하며 조리법도 약한 불에 '볶기' 하나뿐이라 얼핏 간단한 요리처럼 보이지만, 청나라 황실 궁중연회의 귀한 디저트로 취급받는 이유는 만드는 난이도가 굉장히 높기 때문이다.

Non Stick Egg Pudding (Tongheju)

Tongheju Restaurant is considered top of “Top Eight Jus” in Old Beijing and was established in 1822. Mainly specializing in Shandong dishes, Tongheju’s cooking skills are fine and varied. During the period of Republic of China, Tongheju hired Master Yuan Xiangfu to help with dishes, who once worked in the imperial kitchen. Master Yuan made Tongheju well-known to diners with imperial dishes such as pudding-like sweet food made of green bean flour and yolk.
